Color:  Crystal clear - Deep ruby center to a beautiful tawny edge.

Taste:  The taste of the grape pulls through, however, more tannin and acid are present here than in the 1970 Cab.  The feel and taste are also lighter than the 1970.  A good wine, but not great.

Aroma:  Bouquet not as big as the 1970.  Not displeasing, but it lacks power.

Comments:  The wine is very pleasant, but is not distinctive.  It lacks the power of the 1970 Sebastiani Cab.  A good wine, but not as complex as the 1970.

Interesting Phenomenon:  The legs took a full 9 seconds to form.  Legs were very short, fell very slowly, dissipated, and then started over again.

Professional Comments:  Wood aromas picked up from 3 years in Redwood and 9 months in Oak barrels, together with secondary fermentation odors override the varietal aromas of the Cabernet fruit.  Medium body and smooth.  Pronounced wood flavors submerge a youthful Cabernet taste, and leave the wine short of varietal flavor.

Food Match:  A nice beef steak, lamb, or cassoulet.  Pungent or rich cheeses, such as Stilton, Roqurfort, Brie or Camembert.
