Color:  Deep ruby center to a beautiful tawny edge with colors well melded.  Brilliantly clear.

Taste:  Well balanced.  Tannin is low.  Acid is barely evident.  The wine is very smooth to the tongue.  The varietal taste is very bold, but with no other impressions.

Aroma:  Strong and bold, though not overpowering.  Strong varietal aroma.

Comments:  Very pleasing and easy to drink.  Not at all cloying to the palate.

Professional Comments:  Earthy varietal fruit aromas are slightly overridden with wood ( 3 years in redwood) and a faint buttery aroma.  Medium weight, well ballanced and a fairly rich feeling on the pallate.  Complex flavors seem lacking in the Cabernet character promised by the nose.

Food Match:  A nice beef steak, lamb, or cassoulet.  Pungent or rich cheeses, such as Stilton, Roqurfort, Brie or Camembert.
